Chicken with Red Sauce

Chicken with Red Sauce

Note: If you are highly sensitive to trace amounts of gluten cross contamination, it’s advisable to avoid the use of ground cinnamon for this Greek dish. Instead use a cinnamon stick washed with the TrueCeliac food wash for best results.


Ingredients:
For the Chicken:
4 bone-in, skin-on chicken thighs
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon fresh oregano
1/2 teaspoon fresh thyme
1/2 teaspoon fresh rosemary
Gluten free salt to taste
For the Red Sauce:
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 cups diced tomatoes
1 cinnamon stick (washed and grated to produce ground cinnamon)
1 bay leaf
1/4 teaspoon ground cinnamon (prepared as instructed above)
Gluten free salt to taste

Instructions:
Preheat your oven to 180°C (350°F).

In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken thighs with minced garlic, oregano, thyme, rosemary, and salt.

Place the seasoned chicken thighs skin-side down in the hot skillet. Cook for 5-6 minutes, or until the skin is golden brown and crispy. Flip the chicken thighs and cook for an additional 3-4 minutes.

While the chicken is cooking, prepare the Red Sauce. In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.

Add the diced tomatoes, washed and grated cinnamon stick, bay leaf, oregano, ground cinnamon, and salt to the skillet with the onions and garlic. Stir to combine.

Bring the sauce to a simmer, then reduce the heat to low. Let the sauce simmer for 10-15 minutes, stirring occasionally, until it thickens slightly.

Once the sauce has thickened, pour it over the chicken thighs in the oven-safe skillet.

Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).

Once cooked, remove the skillet from the oven and let the chicken rest for a few minutes before serving.

Serve the Greek-style Chicken with Red Sauce hot, garnished with fresh herbs if desired. Enjoy this flavorful and comforting dish, meticulously prepared with gluten-free ingredients and careful attention to hygiene practices.
