Peanut Butter Cups

Peanut Butter Cups

Note: To ensure complete avoidance of gluten contamination, be sure to wash the cacao seeds and raw unsalted peanuts using the TrueCeliac food wash, dry them thoroughly, roast on low heat and grind them down. For grinding the peanuts, a food processor or high-powered blender would work well. Some examples of products on the market that would be suitable for this task include the Vitamix blender or the Cuisinart food processor.

Ingredients:
1 cup raw unsalted peanuts
2 tablespoons gluten free maple syrup (for sweetness, optional)
1/4 teaspoon gluten free salt (optional)
1 cup gluten-free cocao
2 tablespoons virgin olive oil

Instructions:
Preheat your oven to 350°F (175°C). Spread the raw peanuts evenly on a baking sheet and roast them in the oven for about 10-15 minutes, or until they turn golden brown and fragrant.

Once roasted, allow the peanuts to cool slightly before transferring them to a food processor or high-powered blender. Add maple syrup and salt, if using.

Using the food processor or blender, pulse the peanuts until they form a smooth and creamy peanut butter consistency. This may take a few minutes, and you may need to scrape down the sides of the processor/blender occasionally.

While the peanut butter is being prepared, melt the gluten-free cacao butter and olive oil together in a microwave-safe bowl or using a double boiler until smooth and creamy.

Once the peanut butter is ready, spoon a small amount into the bottom of each cupcake liner, spreading it out evenly to form the bottom layer of the peanut butter cups.

Next, pour a layer of the melted chocolate mixture over the peanut butter, ensuring it covers the peanut butter layer completely.

Place the peanut butter cups in the refrigerator for about 10-15 minutes, or until the chocolate has set.

Once set, remove the peanut butter cups from the refrigerator and enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week.
