The TrueCeliac product line was created for severe celiacs and contains absolutely no gluten. The products can be enjoyed by celiacs and anyone looking to completely remove gluten from their diet.
All ingredients are sourced, stored, handled and packaged in dedicated gluten free environments.
Our product line consists of basic staples for cooking and baking. We have a range of flours, rice, maple syrup, salt, and seasonings that are sold separately and also incorporated into our range of cookies, pasta, chips and more.
Severe celiacs, especially those diagnosed with non-responsive or refractory celiac, need foods created specifically with them in mind. Our goal is to reach 0 parts per million (ppm) to prevent exposure to unwanted gluten.
Most store bought products labeled gluten free are contaminated. Severe celiacs need affordable, reliable and accessible sources of truly gluten free food to eat safely.
Most gluten free products are cross contaminated occuring in parts up to 15-20 ppm depending on the country, contributing to adverse reactions and damaging health side effects for celiacs. There are currently very few, if any gluten free foods created specifically to reach 0 ppm to prevent cross contamination and side effects for severe celiacs.
For many severe celiacs eating is an ordeal. It's common to experience mental health issues due to the complexity involved with eating. People with extreme sensitivity to gluten fear the possibility of getting sick, and rarely have security in knowing that their foods are completely gluten free until after they've been eaten. At TrueCeliac, we believe there should be an easier way for severe celiacs to eat.
Through organization, strict protocols and testing, the amount of cross contamination in gluten free foods can be greatly reduced to prevent trace amounts of gluten.
Each link in the supply chain of TrueCeliac products is fully vetted by our team to be completely gluten free. The farms we partner with are located in environments that are free of the presence of gluten. Unapproved products and ingredients are not allowed on site to ensure that produce is preserved in its natural state. No wheat containing grasses are on the premises or in fields surrounding them, and if the farm handles livestock, they are fed approved gluten free feed.
While many ingredients are naturally gluten free, they often become contaminated when handled with equipment, transported in containers and trucks, held in storage, or packaged in facilities that also handle gluten. There are so many variables in the food supply chain, creating many opportunities for gluten free foods to become contaminated.
At TrueCeliac, every stage of food production is confirmed to be absolutely gluten free. Ingredients are traced from their source to their package, ensuring that they did not come into contact with gluten. When food passes from one stage to the next, a single point of contact signs off that all protocols and procedures were followed to prevent contamination.
